Which side of aluminum foil is supposed to be non-stick?

When lining a cookie sheet or baking pan, which side helps prevent food from sticking to the foil? I always get stumped by this.

They do all in South America but it is easy to find llama and alpaca fibers than sheep wool and yes those fibers felt aswell lol
