Question:

why do we use steel for saucepans rather than copper?

this is a science question that i had to answer for homework are there any other reasons than stainless steel is easier to clean and it is harder and i am going to mention that steel saucepans have a copper bottom i know that copper conducts heat better but are there any other reasons quick answers pls need for monday!

Answer:

Copper does in fact conduct heat better than steel, as do silver, gold, and platinum. However, each of these metals in very expensive, and as such you would have to pay several thousand if not scores of thousands of dollars per pan.
copper is a heavy metal that can be somewhat toxic in it's salts. copper will form a carbonate on prolonged exposure to air called patina. this carbonate can often be dissolved by nitrogen compounds in various foods most notably amines. (think ammonia based compounds) steel, particularly stainless is almost completely inert meaning it won't react with the food. p.s. copper is only about 5 bucks per pound.
