Question:

Why is my roast boiling over in the oven?

I am making a pork roast for pulled bbq pork and it is in a 9 by 13 baking dish tightly covered with aluminum foil cooking at 350-325It started boiling over all over the element and smokingWhy is it doing this and what can i do to stop it? Is it possible I have it too tightly wrapped?

Answer:

relax on a chair, put your feet on another chair and rest for half an hour trust me it works ;)
If it's a big roast, your pan may not be deep enoughPork can release a lot of juice and fat and overflow a shallow panAlso, I think pork does better at a lower tempGo with a bigger, deeper pan and lower your temp to 250.
