Depending on the cookie you would use waxed paper (for meringue style because they're baked at a reduce temperature) For all others i would line the pan with foil and frivolously grease the foilThat you would be able to then eliminate the cookies to the cooling rack on the foil and then eliminate from the foilHigh-quality wants.
foil will work, waxed paper will work, saran wrap will work, buttering the pan will work!!! also you could use copy paper on the greased pan just as well as parchment! I only used parchment in the Bakery under cinnamon rolls, elephant ears, danish rolls, etc because they all have cinnamon sugar rolled into them and it melts and runs out on the pan and makes Hellish mess to clean!!!!
