I'm using wilton perfect performance ultraI bought it at wal martWilton Perfect performance ultra set of 3 springform pansI've never used this kind of pan beforeTheres no instructions how to use it,just a recipe on the backIn the lemon cheesecake recipe it says quot;place shallow pan of water on bottom rack of ovenquot; Do you always do that? Place springform on cookie sheet if desired.quot;turn off oven,leave door closed for 1 hour.quot; So after the cake is done leave it in the hot oven for an hour or leave the lid on the cake?! I never put the pan of water in the ovenNor do I ever bake anything in a water bathTo use the springform pan, just make sure the bottom is in very securely and straightI don't even know what brand I have, but depending upon if the crust I'm making is really buttery or not, it sometimes leaks through, so I always put aluminum foil around the bottom of the panFor recipes, use the baking instructions they give for the crust or cakeI do have one cheesecake recipe which is very dense, and for that, after the baking time recommended, I do leave it in the oven for about 40 minutes as the heat recedes, just to ensure it is baked all the way throughUsing the springform pan, after the cake is done, let sit at room temperature to cool down, then refrigerate if it's a cheesecakeI don't take off the outer rim til after it's chilledGood luckYou never know how something works til you try it!
