How can I tell if I'm singing with my Soft Pallet raised? And a few other questions...?

While I'm singing, I can't tell if it's raised or not. It doesn't help that when I'm nervous, my throat will close up while trying to sing (I'm always afraid someone will hear me when I'm not warmed up/in a group which is really annoying when trying to practice...)I know how to raise the pallet, I'm just not sure if it is while I'm singing. Also, I have a lot of phelgm that keeps building up on the back of my throat that makes things difficult as well. What's causing that?
