How do you make layer cakes lie flat?

When baking a two layer cake, the layers always have a curved hump in the middleIs there any way to keep this from happening?

Answer:

There are bands that you can get to place around the outside of the panSome of the bands I have seen get dampened and others are just put around the panThe idea behind the bands is that they slow down the heating of the pan so the cake does not get cooked faster at the edge causing it to set before it reaches the height of the rest of the cakeYou can try to duplicate the band by placing a double thickness of wet paper towel on a double or triple thickness of heavy duty aluminum foil Wrap the paper securely in the foil and wrap the band around the outside of the pan and secure with a clip or pinsYour band should not be any higher than the height of the panSince most cake pans are 2 inches begin by cutting a piece of foil that is 6 or 8 inches then fold it in half, place the wet paper towel in the center then fold the foil around the wet paper towelIt should workIf you want to avoid all this then just cut the hump off the cake before you remove it from the panJust use a long serrated knife and cut across the top of the pan.
