A regular grill will have too much space between the bars for fishYou can buy mesh baskets which go over the grill to hold fishSpray it well with oil to prevent stickingOr you can wrap a whole fish in foil, crimping edgesPlace herbs such as Rosemary or Basil inside the cavityYou may also like slices of lemon or mild onionIt's hard to judge doneness without a thermometerBut you can unwrap one edge check for milky flesh.
Use an oily type of fish such as salmon or fresh tuna, choose cuts that are less than an inch thick and ideally have skin on one side Oil the grill and heat to a medium heatPlace the fish skin side down for +-4 minutesDon't move it around if you can help itUse a spatula and carefully edge it under the fishHold the fish on the spatula with a fork and carefully turn it overGrill for another 3 minutes and remove from the grillDo not overcook, the fish should 'flake' when you open it up with a forkSeason with a squeeze of fresh lemon, salt and pepper.
I have been using this method since I was awarded my diploma honoree from Le Cordon Bleu: First, you need to have a VERY clean oven, and a meat thermometer (this begins in a 500 degree oven, and can smoke a LOT if your oven isn't pristine) 1, 4 or 5 Bone In Standing Rib Roast (a Prime Rib) from the Small End Kosher Salt, Black Pepper, coarsely ground HAVE THE PRIME RIB OUT OF THE FRIDGE FOR AT least ONE HOUR PRIOR TO ROASTING: Preheat oven to 500 degrees Place Prime Rib fat-cap side up in large roasting pan, season quite generously with salt and pepperInsert meat thermometer, making sure that it is NOT touching a bone, and if there is a red indicator arrow, place it in the proper location to indicate what doneness you like your meatPlace in 500 degree oven for 45 minutesTurn oven temperature down to 350 degrees and continue to cook until the meat is 5 degrees from your doneness likingRemove from ovenTent roast with foil, let rest for a minimum of 15 minutes, while you get the rest of the side dishes and guests ready to eatCarve, cutting between the bones or, when purchasing the Roast Beast, have your butcher remove the bones and retie them back on the roast: remove bones and slice English Style (boneless).Enjoy!!!
