I had a Sony head unit in my car, and it was stolen, so I was wondering if I could go out and buy another head unit, and just plug it in as long as the plug were the same? Are all of them wired the same way or does each head unit have it's own wiring design?

Some of the newer ones may not work but I swapped sony xplod head units in my last car. I think as long as the harness is the same all the critical stuff like contstant, accessory, ground, speakers, amp remote, power antenna is in the same place.
They may have identical connections, but that doesn't always mean the wiring is the same. Look at the wiring diagrams (usually available through the manufacturer online) and compare.
