Answer:

All I can say is if you change your pitching every day, it will eventually catch up with you and you will be screwed. Most leagues have maximums for inning pitched so if you have 5 starters going every day, you will fill your innings quota sometime around the All Star Break
I say keep 3 and add and drop 2 from time to time in favorable match ups against week teams.

Because most fantasy leagues have a maximum inning pitched cutting pitchers and picking up starters will be the worst thing you could do. Once you hit your maximum innings the pitching stats wont count anymore so each transaction would be wasted plus you may be releasing pitchers that are very good and other teams will surely snatch them up. Actually you may be best to pick up 3 good starters and then get 1 or 2 dominating bullpen guys who arent closers (do some research, there are 5 or 6 really good ones). These guys wont eat up innings, will pick up an occasional win and will carry very impressive ERAs and Whips (the top ones are great for over a K per inning). Pick smart and make sure you manage your innings well, some guys are great pitchers at home but are terrible on the road so if you spot start them (start them only at home) you will do better. A manager with a good strategy will do as well as someone who trys to draft all the studs early, plus they will not give up all the great hitters (use a good strategy and you wont need to waste your top picks on pitching,good pitching can be had very late in every draft).
