Answer:

It's PALATE. When I was a singer in a rock band, I was told that lemon was good too. However; it was suggested to me in another form. I was told to suck on Luden's lemon cough drops. And I know it might all be in my head, but they seemed to help when singing Led Zeppelin and AC/DC. I can't say for sure what the lemon juice is supposed to do for your soft palate, or what that really has to do with your pipes. But, since you mentioned lemon and singing, I thought i would share my experience. It does make sense that drinking that stuff straight might constrict something in your throat. Just look what the stuff does to your face when you drink it (haha). Try drinking it diluted - say, lemonade. And try those Luden's.
When I was singing, I was told to avoid acidic things as they irritated your throat. Some people are more sensitive to citric acid than others. You very may well be swelling up slightly. You'd probably do better with a lemon drop as was suggested since the acids wouldn't be as concentrated and they would help you salivate to keep your mouth and throat lubricated. Warm tea has always helped me. Limiting your dairy intake and increasing your water will help keep your mucus thin so it's not as much of an issue. Another thing I just realized is that you may be opening your mouth TOO wide. I was just trying it and when I open my mouth too wide, it kind of seems to put pressure in the back of my mouth somehow and it's harder to lift my palate. You shouldn't need to open your mouth wider than having your top and bottom teeth 2 finger widths apart. That should give you a nice open Ahhh sound. Just lift your palate like you are yawning.
Lemon juice causes you to pucker... so I can see that happening to your vocal chord/larynx area.
