I assume you mean a knife sharpener that is ceramic. There are knives with ceramic blades, but ceramic blades can't (practically speaking) be sharpened. You can sharpen a stainless steel blade on a ceramic sharpener, but some types of stainless steel won't take or hold a good sharp edge (no matter what kind of sharpener is used). Other types of stainless steel sharpen quite well.
Only superconductors will expel a magnetic field. You won't find any of them around your house, I'm afraid!
