I've noticed in the US that limes (out side of Florida) are usually more expensive than lemons. In Europe limes are even more expensive. I personally prefer the taste of lime in my drinks... Bartenders probably use it more because it give your drink a more exotic taste. I've been in and out of a lot of places and the use of limes in bars seems to be a recent happening.
Well, Usually Bartenders use Lime for the reason being that it contains higher level of sugars and colouring, there for it gives in the better scent, not to forget the Colour blend in the cocktail.. Also Lime has a perfect taste of bitterness or perhaps it settels in nicely with alochol, Anyways... Lemon slices are usually used for decoration. Not all the cases though, depending the drink.
Most people prefer limes, gin/vodka tonics always get limes unless otherwise suggested, in vodka sodas you never know so I always ask, most people still prefer limes. All margaritas and anything with cranberry juice always gets a lime, and all other juice mixes get a cherry or orange, there just aren't many drinks that call for a lemon (besides long islands, lemon drops, tokyo teas and AMFs)
Limes have a distinctly different taste and aroma to lemons, and people have their preferences. I'm sure most bars would have both, just ask.
I prefer lemons too. Especially in my Gin and Tonics. I find the limes make the GT too bitter for my taste.
