Question:

Can I bake a cake and freeze it today to ice on Friday afternoon?

I usually bake and ice fresh, but I don't have a whole lot of time this weekI have to have this cake ready for Friday night, but today is the only day I have time to bakeCan I freeze the cake and then take it out and ice it on Friday afternoon? How do I freeze the cake and how soon before I ice it should I pull it from the freezer? It will be 2, 8 inch rounds that will be sliced and filled and then icedDo I need to crumb coat and if so how do I do that and when should I do it? Thank you very much in advance! I hope this was easy enough to understand:)

Yes you can bake it today and I doubt anyone will know the difference when you serve itAllow the cake layers to cool completely before wrapping and freezingWhen cool, wrap each layer carefully but well in plastic wrap then in aluminum foilPut the wrapped layers in the freezer and be sure they are on a flat surfaceYou can put on layer on top of the other if you don't have room in the freezerYou can put the cake layers in the Fridge on Thursday night to defrost or just leave them out on the counter on Friday morningBe sure they are completely defrosted before frosting.
