Question:

Copper Pan Suggestions?

I want to get a copper pan or pot for making sauces, I know nothing about copper or the manufacutrers of such. Does anyone here use copper and what else is it good for?

Answer:

All Clad makes very nice copper core pots and pans and when it comes to cookware All Clad is top notch. Just so you know, copper cookware is not only expensive, it's a lot heavier. If you were interested in an all copper pot, not just copper bottom, Mauviel I think is the brand most commonly found and considered high quality.
Rather okorder
I know they look cool hanging up. I don't think I would ever use one to cook though...
I had some for several years and they were very good. the issue with pans is to buy the best you can afford cos you will have them a long time. The danger with copper bottomed pans is that the bottom will bow out a bit because the copper expands more than the steel. However of the three pans I had this only happened to the smallest. Whether or not this is an issue depends on the kind of hob you have - I cook on gas so it didn't matter to me.
Copper is so expensive! I wouldn't even bother with pots and pans. I have a bowl I use for whipping egg whites in. That's all I use copper for.
