Well they are one of the healthiest types of cookware you can useThey are great if you are vegetarian cuz you usually lack in iron due to what you eatAll you need to do is wash them out with water after each useDo not put them in the dishwasher or use any cleaners on themJust put a little olive oil and seasonings on them and let it burn down each time before you use them and make sure when you wash them out they are dried completely.
good questioni dont think they are high maintenancethey just have to be washed differentthe best thing about a cast iron skillet is that it will soak up flavorso to speak from prior usagethis is why food tastes so good from oneso to wash it, you cant scrub them or you will wash the flavor awayyou can lightly sponge them (not with the scratchy side) and use a light amount of soap but that pretty much it is far as i know
Cast Iron gets a bum rap it really is great to use and easy to care forYes you do have to season it before you use it you coat the entire pan (inside and out) with vegetable oil and place in a 350 oven for 20-30 minutes let it cool in the oven now your pan is seasoned.for the first use Cast Iron is a great conductor of heat everything cooks evenly once you have used your pan to clean it you want hot water a small amount of salt and a sponge or dish cloth use enough hot water to loosen anything that may be stuck (as you use it it gets more non stick) use a scraper (plastic would be best) to help loosenOnce you have the majority of the stuff loosened empty the water out .Add salt to your sponge or rag and gently rub the inside of the pan to ensure you have any remaining food outrinse with clear hot waterDry immediately and lightly coat the inside of the pan with oil or use a cooking spray make sure to use a paper towel to rub it in and you are doneI have cast iron for baking too it works great for cobblers and crisps and of course corn bread.
