I am a former chef and like Dave C and the Columbus said it is pretty well the reason, plus in the cultures were they are used and even in mexico and central America too, it was an easy way to sell in the flavours, cook with out burning, true it doe add some flavours, but most of all it was the convenience of the banana leaf being there and readily available, I have had many foods in them and have used them myself, in fact when I worked in Singapore I had a Fish head curry serve on one in a restaurant called the Apollo Banana Leaf Restaurant, and it India they also use them as serving plates in some Hindu temples when serving the lunches.
You could also add marinated mushrooms to the skewers but, I thought you wanted to use your clam shells?
i think it adds to the flava.
