I noticed on my motorcycle that I have electric cables coming from my clutch and handbrake. What are they? I imagine the handbrake is for the brake light. But the clutch?

There is a kill-switch from your clutch so it can't be started in gear without the clutch lever pulled, You are correct about the brake.
Are there any switches built into your hand grips? Starter, kill switch, turn signals, etc. All those electrical items need individual wires to operate.
There is switch in the clutch lever housing, this prevents the engine from being started if the bike is in gear without having the clutch pulled in by locking out the starter ignition circuits, there will be a similar switch on the side stand which kills the engine if a gear is selected when the stand is down. These are safety cut outs. The front brake lever wires are for the brake light.
