dry wall is the way to go re-insulate in the places needed but you may have to shim out the drywall to match trim or use a shim to the back of trim as drywall is usually thinner than plaster and lathe

Dry wallIf you need insulation, put in some insulation first then Dry wall.
Insulate with fiberglass batts and then sheetrock, tape and paint.
