No chance, I'm afraid. The quartz element is built into an integrated circuit. You cannot separate it. If you want to open a watch, it can usually be done by inserting a knife into the gap between the front and back of the case and levering. This will enable you to change the battery, but not gain a crystal. Not only that, but the quartz in a watch does not really generate electricity. It is part of a resonant circuit, which is not quite the same thing. Generation of electricity by pressure on a crystal is called the piezo-electric effect, and it is how some microphones and record player tone arms operate. However, the voltages generated are tiny (thousandths of a volt) and would, for example come nowhere near lighting any kind of bulb.
Take it to your local jeweler and explain your dilemma, I'm sure they will oblige.
