You do not need to grease the parchmentIt is similar to waxed paper, and your food will not stick to it If you turn the oven down about 25 degrees and bake it a little slower, you should not have the over browning problemMake sure to remove the cookie from the oven just before you think it is doneLeave it on the cookie sheet and allow the cookie to settle (let the cookie flatten) on the cookie sheet resting on the top of the stoveIt will finish baking outside the ovenAnytime something is browning to fast, just turn the oven down about 25 degreesIt will continue to bake, but not brown as muchIf you want to try the foil trick, just wrap foil around the edges of the cookie while it is bakingThe edges won't brown as much if they are coveredPersonally, it is so much easier to just turn the oven down a few degreesIt will take a little longer to bake, but it will be worth the waitGood Luck.and happy baking.

EDIT: In case, Rogue doesn't see your other questionIt's not necessary to butter or oil the parchment because some of the oils in the cookie come out onto it while it's bakingTurn it over on your cooling rack after about 5 minutes and you should be able to easily pull off the parchment paperThen turn it right side up to finish cooling.
