have a look at venture canoes in my scout group we have a venture ontario 14 ft along with some old towns and mad rivers the venture is light enough to rooftop on your own and cheap to buy but stable enough to fish from it is strong too it is easy for one person to paddle alone but can take 3 adults or 2 adults plus weeks worth camping gear colemans do make plastic canoes but they are not great value for money ie cheap and nasty colemans do not track well we had one and got rid of it as soon as we could
