what I do: lay a piece of aluminum foil in a shallow glass cookwareMake sure the foil is large enough to wrap the meat and seal the edgesput my favorite dry rub on both sides of the meatlay the meat into the foil lined pan, cook with the fat side UP slice up a medium to large sweet onion, lay on the meat spread across the meatCover and seal the edgesYou will need to get access to the meat when the food is cooked so you can pour off the juicesI cook at 275 for 4 hours, but I like my brisket well doneMy wife cooks at 275 for 2 hoursWhen the meat is done, open one end of the foil, pour off the juice and saveopen the foil, lay on a cutting board, and slice on the bias, I like a nice 45 degree cut, LOOKS GOOD, does not add to the tastepour the juice over the sliced meat YUMMMMMMM
