How do I safety-proof a home/apartment for a child above 5?

Answer:

Dish soap and bleach are far from a lethal combination if combined in the proper amounts, they also are not particularly effective as sanitizing agents when up against animal feces in the amounts that are recommended for home use. At the very least the shop owner must put the material data safety sheets up where employees can see them (OSHA rules). I am quite sure that any bottle of bleach specifically says to use gloves and safety goggles when handling. If you want to lose your job then sic OSHA on the shop owner. Other wise buy your self some gloves.
