You don't. You can't crush quartz (silicon dioxide) into a completely different element/compound, i.e. gold.

Free milling gold can be taking from rocks by crushing and panning. If you have a quartz Ore sample(with VISIBLE GOLD), it is worth more as jewelry gold then it would be crushed.. Just a thought. Google SIXTEEN TO ONE MINE. They sell gold in quartz.. Infused gold that is locked in the rock requires chemical processing
There is no other way to do it that I know of. You can get gold out of placer deposits without crushers, but if it is still in the host rock (ore) you must have crushers.
