Question:

How durable is a stainless steel exhaust system?

How does it hold up to the weather elements and is it easy to scratch/damage on the road from debris?

Answer:

It's very resistant to corrosion, most of which comes from the engine. As to toughness, just as tough as the rust-prone carbon steel they used to use. Ford has been using stainless on the Crown Vicky exhaust for over ten years, they are the most popular cop/taxi car around. When I got my '89 Mustang, it had stainless exhaust pipes from the factory. I would polish the tips with Brasso, an abrasive but good metal cleaner, until they were beautiful !! Did that for like ten years, until I removed the factory exhaust because it was too small.
Stainless steel systems will reduce internal and external corrosion much better and longer than plain steel exhaust systemsmy 93 Grand Prix SE came with a SS exhaust system and lasted 15 years in Wisconsin winters before I had to replace mufflersthe pipes are still good. I would highly recommend them.especially mufflers and tailpipes which get the majority of internal corrosion from moisture and acids in exhaust gasesmost exhaust systems rot from the inside out. A full or cat-back SS system will lasts for many years.much longer than a non-SS ssytem.
Stainless is the most durable exhaust system you can buy. Good quality stainless will not rust and is not easily damaged or scratched.
