I believe that the artists are trying to portray an emotion of exhaustion to the point of deathHe would have been pretty worn out with severe loss of blood from the beatings and the lack of re-hydration throughout the day.

Jesus was a carpenter, He would have been healthy and strong throughout His ministryBut, before and at the time of His death, He had fasted for forty days and was beaten to near death then crucifiedSo, I would imagine the portrait at the end would have looked pretty badBut I prefer to envision Him as He is now, in His resurrected body, whole and strong and alive.
