im not sure but if it had no lime flavor when you used regular limes then i guess it does make a difference But i dont know exactly.
Key refers to the islets off the southern tip of Florida. Key limes are smaller and sweeter than regular limes. You probably should have added zest from the limes.
I have used regular lime to make key lime pie, and it turned out pretty good. My recipe: 5 egg yolks 14 oz can sweetened condensed milk 6-8 tablespoons lime juice 1 cup heavy cream 3 tablespoons confectioners' sugar graded rind of 1 lime..zest only
I actually just watched a show about key lime pies the other day. Key limes are more tart than Persian limes (the bigger ones). This is due to their size, among other things; they are smaller so the lime taste is much more concentrated. The show was a cook-off between two famous pie makers in the Keys--one used one key lime, 4/5 persian limes, sweetened condensed milk and egg yolk. The other used bottled lime juice, condensed milk, and some other things I don't remember. They said that the pie should be yellow, not green, since that is the natural color of the juice. So basically, yes. Key limes are more tart. Hope this helped!
