Answer:

Carbon fiber is lighter but generally more expensiveAny performance difference is in the design not the materials.
The sound is more smoother with stainless steel.
Well, aluminum really doesn't rust, it oxidizesBut Stainless doesn't really rust eitherBoth require specialized welding (think TIG or such)Performance? 6 to 1, half dozen to the otherWeight? Definitely aluminum, but is the amount you talking about really that much of a difference? Durability? I'd choose stainlessYa ever see an aluminum exhaust system on a bike before? Not me, and I've been riding 32 years.
Where you want it to be 36 tubular, you will need to get a double bed, that is a knitter and a ribber and work your tubular knitNow for the yarn that your using, it could be the standard or fine gauge machine, you may luck out with the mid gauge that is only 2 that meet that criteria, it would be either the SK/SR860 (will need something for the patterning) or the Artisan 70D that does not do as much patterning as the 860 but maybe you don't need that part, but some of them can be done by hand manipulatedAt allbrands, they show the sk160 then the kc860 upgrade carriage and the ribber as wellHope this helps.
