For me, it depends on the size of the dice you wantIf you are boneless breasts, I would cut them with scissorsYou'll find it a whole lot easier and get more uniform piecesAs for cooking it, if it's a small dice, I would just saute it a little in olive oil, for bigger pieces, I'd put them in some water, which will take longer in order to be tender.
