The Predator takes off its face shield/mask/helmet/whatev just before his fight with Arnold, because it's a show down. Just like a dude in an alley fight would take off his shirt, or a boxer would take off his gloves, it's showing that he's getting down to the basics for a good honorable and raw fight. Which is one of the Predators' admirable traits, they are honorable fighters. The predator laughs at Arnold to mock him, basically. Its laugh is its way of saying If I got down, yo're coming down with me. And remember, it can mimic human sounds, which is why its laugh sounded human. It's super creepy when you think about it.
