The industry standard for subfloors is 3/16 in 10' or 1/8 in 6'. This is a little bit too righteous but if your floors are much worse than that it's a good idea to level them. If you don't the floor will bow and flex when you walk on it. This will lead to weakening of the tongues and board separation. You can buy an excellent self-leveling compound called Novoplan 2. Mix it nice and soupy and pour it on the floor. With just a little bit of guidance the patch will find its own level. If you don't want to go to all the trouble of leveling your floor with cement, you can fill low spots with another material as you install the floor. Pieces of cardboard, roofing shingles, or scraps of vinyl flooring, anything that will fill the void beneath the floor without bouncing or compressing.
