If it was like MY grandmothers recipe then it wasn't cream cheese it was Old English, yes Old English, that cheese/pimento spread in the little tiny jar you mix it with whipped cream and pecans I was totally grossed out when my mom told me, but she made it and I tried it and it was DELICIOUS Her recipe called for cherry jello mixed with queen anne cherries though. The lime version may be different
Here's my family recipe we've been making for years. Originally came from a community cookbook. Marge's Quick Salad 1 Large carton cottage cheese 1 Large package of lime jello 1 can crushed pineapple 1 Large container Cool Whip 1/2 cup chopped walnuts Combine all ingredients together. Do not drain fruit or add water to jello. Refridgerate for 1 hour or longer. Can be made ahead and kept overnight in fridge.
My college dining room had a similar mold; it was lime with pecans and pineapple on the bottom, that creamy layer you're looking for in the middle, and lime with cherries on the top. I LOVED the stuff! I've never really been able to get that exact recipe, but I have a Joys of Jello cookbook and I've scoured the internet for variations on that center layer. This is the center layer of a Blueberry layered jello salad, but it might help you: 8 oz. each sour cream and cream cheese, softened, blended with 1/2 cup of sugar. I hope that helps!
