If polyester resin simply reduce the hardener amount. Your conditions are considered hot for working any thermo-set compound. If using epoxy resin the two parts must be mixed in the correct proportion, and the only way to get longer working time is by using a slow hardener, or working in a cooler location. Due to a high risk of condensation contaminating the mix, using a fridge to chill the resin before mixing is not recommended. The hardeners for polyester resin are completely different to the epoxy system, and a percentage of from 0.5 to 2% can be specified depending on the conditions and resin formulation. This hardener group does not store well becoming highly unstable (explosive) after extended storage in some conditions, at all times it is very bad news if you splash it in your eyes - blindness can and is the consequence, regardless of how quickly you get it washed out
