You can keep a huge box of baking soda, for small kitchen fires, Costco has a really huge on for a few dollars, Walmart has a larger than grocery store size for cheap also. You can call during the day the business number to the fire dept and ask about codes in your city also, they might be faster to get an answer than the building codes person at city hall.
