You can use any pan / handles able to withstand the heat in the oven.I have made monster cookies using a frying pan.There was no difference in using a cookie sheet.You can make cookies small or large , and use your choice of pans If you use glass (Pyrex ware) keep the oven temp 325 or less. )
You can always use a cake pan, just line them up like you do on a cookies sheet.)
No real alternative that I know of, but you can line it with parchment/wax paper or foil to make removal easier if they're sticking.
