Have you tried wrapping yourself in an old blanket for the night and then folding it up for the dog? Sometimes if the smell like you the dog will go a little easier on it. Good luck!
A local shelter near my area uses Patented Kuranda Dog Beds, the beds are chew resistant as they like to call them. The dogs love them.
Find the right sized bed first of all...too big and he has plenty of room for chewing on it and too small and he will be too uncomfortable to use it. After you find that send the bed and a couple of dryer sheets through the dryer for a few minutes-the sheet won't transfer any of the actual chemical onto the bed but it will leave the scent and he shouldn't want to chew the bed. Another thing you can try is to spray the bed with a mixture of eucalyptus oil and water--2-3 drops oil to 2 cups water-it will have just enough smell and slight taste that he won't want to chew it (that worked wonders for my Great Dane and her mattress).
