This is kind of Mediterranean styleIt’s easy because you use pesto and roasted peppers from a jarThe tapenade is great as an appetizer all on it’s own served with crackers Sea Bass w/Tapenade 1/2 cup fresh breadcrumbs made from soft white bread 1/3 cup Kalamata olives or other brine-cured black olives, pitted 1/3 cup roasted red peppers from jar, drained 3 tablespoons purchased pesto 3 1/2 tablespoons olive oil 6 6-ounce sea bass fillets Lemon wedges Combine first 4 ingredients in processorAdd 2 tablespoons oil and puree until almost smoothSeason to taste with salt and pepper ( you can make the Tapenade a few days aheadCover and chill) Preheat oven to 400Heat remaining 1 1/2 tablespoons oil in heavy large skillet over high heatSprinkle sea bass with salt and pepper, add fish to skillet and cook 2 minutes per sideTransfer to rimmed baking sheetSpread 2 tablespoons tapenade atop each fish filletBake fish until opaque in center, about 8 minutesTransfer to platesServe with lemon wedges

Oven-Baked Sea Bass Simply amazing!! This is by far my favorite way to prepare fish!! A must try!!! Ingredients 3 garlic cloves, crushed in a press 1 Tbs extra virgin olive oil 2 tsp kosher salt 2 tsp coarsley ground black pepper 12 oz sea bass fillets (cleaned and scaled) 1/3 Cup white wine vinegar (or white wine) 1/2 Cup loosely packed presh parsley leaves lemon wedge to garnish Directions Preheat oven to 450In a cup mix garlic, oil, salt, and pepperPlace fish in a shallow 1 quart glass or ceramic baking dishRub fish with oil mixturePour wine over fishBake fish, uncovered, 15 minutes; sprinkle with parsley and bake 3 minutes lonfer or until opaque thoughout and thickest part of fish flakes easlity when tested with a forkDrizzle any pan juices over fish and serve with lemon wedgesServes 2 //////////////////////////////////////Roasted Sea Bass Ingredients: 1 pound sea bass (or other white fish) 1 teaspoon oil salt and pepper to taste Directions: 1Lightly oil you broiler pan to prevent the fish from sticking2Season the sea bass with the salt and pepper3Bake the sea bass in a preheated 450F oven until cooked (no longer opaque), about 10-15 minutes depending on how thick the sea bass is Mango and Black Bean Salsa Ingredients: 4 small mangos (peeled, stoned and cut into bite sized pieces) 1 can black beans (rinsed and drained) 2 jalape?o peppers (chopped) 2 green onions (chopped) 1 handful cilantro (chopped) 1 teaspoon cumin 1 lime (juice) Directions: 1Mix everything in a large bowl.
