PEX is made from poly(ethene)polymerisation
It's less likely to dissolve, thereby reducing corrosion of the pipe and pollution of water.
It doesn't get heated to an extent that a copper one gets heated,so anyone getting in contact doesn't get burns. It is cheaper than copper. Copper corrodes,whereas PEX doesn't corrode.
