Imagine a really big, really tough flying turkey with a long neck and big head making the sound of a 18 wheeler air horn. I'm not much of a birder or shotgunner, but the guys here use all the things you would if you imagined a combined duck hunt and woodland turkey hunt. Camo everything and the biggest turkey loads you can chamber. In Texas steel only! They call them the prime rib of the skies, although I prefer duck still. If they are endangered on the east coast come out west, we have plenty of them. People crash their cars if they come down near a highway and start landing through windsheilds.

I have never personally eaten a sand hill crane but those who have tell me that they are quite good table fare. Since they are considered a game animal, it would be illegal to do anything wiht them after killing except to eat all edible parts. It is against the law to waste any edible part of a game animal. Therefore, I would suppose that anyone who is hunting them is eating them, or possibly giving them to someone else to eat.
