Here is something so easy! 1 package of chicken tenderloin, cut into bite size pieces3 broccoli crowns, cut into bit size trees2 cloves of garlic, chopped1 cup of chicken brothSaute in olive oil, garlic and broccoli for about 10 minutes, add chicken and saute on medium heat for another 10 minutesTurn the heat onto high add chicken broth, bring to a boil and turn back down to medium and cover until chicken is done and broccoli is done to your likeness toss 1 lb of cooked spaghetti with olive oil and grated cheese and pour mixture on top! Hi, I would make Chicken Marsala over rice or pasta tossed with olive oil Parmesan cheese and garlic powderThis is so easy to make and it will impress him tooThe recipe for my Chicken Marsala follows4 boneless skinless chicken breasts 1 pound mushrooms, sliced 2 ozPancetta or bacon, diced 2 Tbspfresh basil chopped or 1 tspdried basil 1 cup Marsala wine 1 cup heavy cream salt and pepper to taste 1 cup flour 2 tablespoons butter Saute Pancetta or bacon in skillet until crispy and lightly brownedRemove with a slotted spoonPlace chicken between 2 pieces of plastic wrap and ound to 1/4-inch thicknessDredge in flour; shake off excessSaute Chicken in bacon drippings and 2 TbspbutterAbout 4 minutes on each sideRemove from pan and put asidePut mushrooms in pan and cook for 2 minutes before adding wineCook for 2 more minutes and then add heavy creamAt this point if you are using dried basil you would add this nowWhen the sauce reduces to one-half, put the chicken back in the pan and cook for 2 more minutesIf using fresh basil chop and sprinkle over finished dishI hope you try this it is deliciousThanks, Chef Brenda
