The illustration you mean is the rubber sheet with a cannon ball denting it? The rubber sheet is 2 dimensional but represents the 3 dimensions of space bent into an invisible 4th dimension. We draw it like this because we can't draw in 4 dimensions and anyway space is invisible. I'm sorry there is no other way to describe it, it is the best we can do. If you can't get your head round it, don't worry you are not the only one. As for the eclipse photo's, this is an optical illusion and nothing to do with bent spacetime, it's just the sun's atmosphere you can see.
