this is what i make when I'm in a hurrymy kids love it1 medium eggplant, peeled and sliced into 1/2 inch rounds 4 tablespoons mayonnaise, or as needed to coat seasoned bread crumbs, enough to coat sliced pieces ( i usually use italian style bread crumbs) Preheat the oven to 350 degrees FLine a baking sheet with aluminum foilPlace the bread crumbs in a shallow dishCoat each slice of eggplant on both sides with mayonnaisePress into the bread crumbs to coatPlace coated eggplant slices on the prepared baking sheetBake for 20 minutes in the preheated oven, until golden brownFlip slices over, and cook for an additional 20 to 25 minutes to brown the other sideonce browned, I sometimes add shredded mozzarella to the top and meltor parmesan cheesei have also added marinara sauce then added cheese.
