Answer:

A header replaces the exhaust manifold while a cat-back system replaces the entire exhaust system after the catalytic converter. As far as which system is the best, that depends on how you judge them (a big criteria for many people is how it sounds and that is a subjective call).
Sounds like the girlfriend is lightweight so you shouldn't have a problem with the first part of just having her hop on the back. You will need to be able to hold her weight while you are idle. Other than that it is not hard to ride with someone on your bike as long as they are holding on. The bike is what is carrying the weight. All you have to do is control the bike. If you personally have problems holding the bike up don't do it. Some bikes are bigger and heavier than others and I have had to lay mine down a time or two due to inexperience and the bike is heavy. I am more experienced now though and I no longer have that problem.
You just have to get use to the added weight. Since she weighs little you don't have a big problem. I would practice doing turns in a parking lot with her until you are comfortable with her a passenger. Be sure she leans with you in the curve, if not this could cause you to wreck or lose control of the bike. Good Luck, stay safe and have fun. P.S. Once you get use her weight then you will hardly notice she is back there. Also try not to take turns sharpe with a passenger, due to the fact that people cant read other minds if you take a curve/turn too sharply they may freak out and not lean with you, of which can cause you lose control of the bike and wreck.
A cat-back exhaust system simply means one that includes everything BEHIND but not including the catalytic converter. A full exhaust would include the cat and the pipe ahead of it.
for me its pretty easy, just a little heavier. they have tips for the passengers in the motorcycle riders handbook from the dmv i make them read before we go. just to be safe. if you can do a three point turn with that bike plus 100 pounds then it shouldn't be a problem in my opinion.
