When I worked in the north of Canada, I use caribou at the hotel I worked at, it is much like beef in texture, once it has hung and you have cut it I would use the rear haunch portion, slice thin and soak for 2-3 hour in the marinade, then air dry it, I like a bit of a smokey flavour so after a few day to hasten the drying process put it over a slow fire, to add the smoke flavour, once it is fully dried you have to keep it in a sealed container to keep it dry, if you do not it can spoilMost people use a soya sauce, salt and sugar marinade, I like some spice, tone down the soya sauce adding other flavours, like sesame oil or chili's.
