Are you talking single or double crust recipes? For a double crusted pie, I start with the (preheated) oven at 425 for 15 minutes, then lower the oven to 350 for about 45 minutes (most fruit pies) and the crusts are fine without over browningI use Crisco in my short crust and no sugarIf you use butter or margarine instead of shortening, that might make a difference as well as the sugar.
