My science teacher ever told me that the dull side is because the aluminium is oxidised, hence the dull appearanceBut in general, the shiny side should be towards whatever you want to generate heat to, i.eto keep foods warm, shiny side faces in towards food; to keep food cold, shiny side faces out away from foodI'm not so sure if my teacher is rightAluminium foil companies state there is no difference which side to use, but I always face the shiny side to my food anyway.
It doesn't really matter that much, but if you want to get really particular, shiny side out, because the heat reflects it better.
I use the non-stick foil by Reynolds Wrapit works greatAlso has wording on foil NON-STICK SIDE Work great with all types of beef/poultry and fish Otherwise, i agree with everyone else for regular foilDoesn't matter! Good look with your dinner!!!!
