Not true about oil problem with quartz (Silestone or Zodiac) Granite is notorious for being susceptible to stains from acid foods (think lemons, oranges, vinegar, etc.) and must be sealed at least every 2 years. Quartz is absolutely impervious, cleans with a wipe, extremely strong and chip free. I have had it now for 5 years and have no reservations about recommending it as a first choice to anyone. Go to Home Depot (Silestone) or Lowes (Zodiac by DuPont) an get all the information.
My worktops are made from that (granite coloured) plasticky stuff you normally get in UK... they look great, are easy to keep clean and don't show a minute of wear for the 8 years since they were installed. (Hope this helps.)
Stay far away from quartz. True granite is the black granite and is very dense. The colored granite is a mixture of granite chunks and other minerals. The more black you see, the more granite it contains. Quartz is less dense and more porous to oil. The light colored granite is also porous and will soak up oil. The oil stains look poor. Oil stains can be removed with 409 Glass and surface (purple); but takes 3 to 4 days for the paper towel soaked with 409 Purple(covered with plastic wrap) to soak in and then evaporate. Even with a cost difference, I would go with the granite in the kitchen counter and floor, quartz and marble by work in bath.
