Win7 is more stable and doesn't force you to reboot every 10 minutes due to updates. However Win7 won't be supported for very much longer.
I literally haven't seen any difference between W7 and W10 in terms of gaming performance. And I even tried this after doing an upgrade, not clean install, of W10 during the free upgrade period. The only main difference is that DirectX 12 is only for W10, so in the future, if games only support DX12, they will only work with W10. The Creator's update has a Game Mode which supposedly helps performance, but it looks like it only works with certain UWP games.
Win 7 is more bug free. win 10's updates tend to mess with the system. If you game go win 7.
