I think you have the right idea. Space time does exist both within and without of all bodies which exist in the universe. This analog has several limitations, including those you cite, that space time only warps around the outside of mass, and that the warpage does not go in all directions. The advantage is that it supplies a model which can be used to make predictions, which is a powerful scientific tool. That the analog ignores the warpages in other planes is a loss, but a simplifying trade-off because it can be shown that those warpages do not materially affect the gross orbital characteristics of the bodies.
